Louise's Honey Snack Mix

16 cups of snack and or cereal items: Rice/Wheat/Corn Chex, Crispix, Cheerios and/or Kix cereal, pretzels (various sizes/shapes), Bugles, Wheat Thins etc.
1 cup JohnsonHoneyFarm.com Wildflower Honey
1/2 cup butter

Melt butter and then mix with JohnsonHoneyFarm.com Wildflower Honey. Pour honey-butter over cereal/snack mix and mix well.  Bake 325 degrees for 5 mins. Stir well and return to oven for 5 mins. Continue baking/stirring for a total of 30 mins.  Spray 2 large cookie sheets with cooking spray or use parchment paper; dump the snack mix on to cool.  Mix and gently break apart as it cools.

Iowa State Fair Honey Lemonade

1 (30 oz) carton Sunkist frozen lemon juice.
25 oz of JohnsonHoneyFarm.com Wildflower honey (approx 3 cups)
Combine lemon juice and honey.  Then add water to make 2 gallons.  Mix well and enjoy.

Honey Blondies  by 2016 American Honey Queen Kim Kester

1 Cup JohnsonHoneyFarm.com Wildflower Honey
3/4 Cup butter or oleo, softened
1 egg
1 tsp vanilla extract
2 Cup all-purpose flour
1/2 tsp baking powder
1/2 Cup semi-sweet chocolate chips
1/2 Cup chopped toasted pecans

In medium bowl, cream JohnsonHoneyFarm.com Wildflower Honey and butter/oleo until light and fluffy.  Beat in egg and vanilla.  Add flour and baking powder; mix until combined.  Fold in chocolate chips and pecans.  Spread batter into greased 9" x 9" square baking dish.  Bake at 350 degrees F for 40 minutes, or until wooden toothpick inserted near center comes out clean.  Allow to cool completely.  Cut into squares and enjoy.   Click here for printer friendly version.

Honey Holiday Punch by 2016 American Honey Princess Tabitha Mansker

1 1/2 cup JohsonHoneyFarm.com Wildflower Honey
2 cup apple juice
1 1/2 cup cranberry juice
1 1/2 cup grape juice
1/2 cup lemon juice
2 liters ginger ale

Combine honey and apple juice.  Simmer on low.  Add all other juices, stir wiel and refrigerate.  When ready to serve, stir in ginger ale.  Click here for printer friendly version.

Grandma's Walnut Honey Pie from "Our Iowa" magazine, Dec/Jan 2017

3 eggs
1 cup packed brown sugar
Dash sale
1 cup JohnsonHoneyFarm.com Wildflower Honey
3 Tbsp Butter, melted
1 Tsp Vanilla Extract
2 Tbsp plus 1 Cup coarsely chopped Iowa black walnuts (divided)
1 9-inch Unbaked Pastry Shell

In a large bowl, beat eggs.  Stir in brown sugar, salt, honey, butter, vanilla and 2 Tbsp walnuts until well blended.  Pour into pie crust.  Sprinkle remaining 1 Cup walnuts over the top.  Bake at 350 degrees for about 1 hour or until knife inserted in the center comes out clean. Cranberry Pork Steak

Pork Steak
1 teaspoon JohnsonHoneyFarm.com Cranberry Cream Honey for each pork steak
Foil lined pan
Aluminum foil

Place pork steak in pan.  Glaze each pork steak with 1tsp JohnsonHoneyFarm.com Cranberry Cream Honey. Cover pan with foil. Bake @ 350 degrees for 35 to 45 minutes depending on thickness of steak. Serve with rice or other side dish.  Easy clean up.  Click here for printer friendly version.


Jalapeno Honey Cheese Dip

1/2 lb. Velveeta Cheese
2 tbsp. JohnsonHoneyFarm.com Jalapeno Creamed Honey

Melt cheese, then add JohnsonHoneyFarm.com Jalapeno Creamed Honey. Stir.  If more "heat" is desired, add additional diced jalapeno peppers to taste. Click here for printer friendly version.


Cinnamon Honey Glazed Sticky Buns

2 tablespoons Butter or Margarine, softened
1 Loaf Frozen Bread Dough, thawed
1/3 cup JohsonHoneyFarm.com Wildflower Honey
1 teaspoon Cinnamon
1 cup Finely Chopped Pecans or Walnuts

Grease 12 muffin cups with butter
Roll out thawed dough on lightly floured board to 12 x 8-inch rectangle
Mix honey and cinnamon.  Using back of spoon, spread in even layer over dough.  Sprinkle with nuts.  Rollup dough, starting from long edge and end with seam on bottom.
Cut dough roll using a gentle sawing motion into 12 equal-size buns.  Place buns, spiral side up, in muffin cups.
Cover with a piece of plastic wrap and let rise 30 to 60 minutes or until buns puff and fill cups.
Bake 350 degrees for 15-20 minutes or until golden.  Remove from oven and carefully turn pan upside down onto board, letting syrup drip onto buns before removing them from pan.  Click here for printer friendly version.

Honey BBQ Sauce                                            Makes about 2 cups

1 can (10 1/2 oz) Condensed Tomato Soup
1 tablespoons Worcestershire Sauce
1 tablespoon Lemon Juice
1/2 cup JohsonHoneyFarm.com Wildflower Honey
2-3 tablespoons Vegetable Oil
1 teaspoon Prepared Mustard
Dash Ground Red Pepper or Bottled Hot Pepper Sauce (optional)

Combine all ingredients in medium saucepan.  Bring to boil over medium heat.  Reduce heat to low and simmer, uncovered, 5 minutes.

Honey Pork Chops

6 Boneless Pork Chops
1 cup JohnsonHoneyFarm.com Wildflower Honey
2 Garlic Cloves
3 tablespoon Soy Sauce
1/2 cup wine (optional)

Place all ingredients in zip closure bag.  Refrigerate overnight, turning occasionally.  Broil or grill chops 15 minutes each side; coat with marinade every 5 minutes.  Cooking time will vary with thickness.  Cook to internal temperature of 145 degrees.  Can use other cuts of pork with this marinade.  Adjust cooking times with cut of meat.

TIPS From Louise

  • Do NOT put your pure or comb honey in the refrigerator...it will cause it to crystallize.
  • To "fix" crystalized honey, put the container in very hot, but not boiling, water.  Check after 5 minutes.  Repeat if crystals are still present.  Do NOT put your container in the microwave!! Your cute little honey bear will melt, explode, shrink or something as unpleasant (the voice of experience).
  • Store the pure honey that you are using daily at room temperature; storing it in the refrigerator will cause it to crystalize
  • To keep comb honey, put it in the freezer to keep it from crystalizing.  
  • Purchase your honey in larger containers like quart jars; fill your small container for everyday use and store the quart jar with the remaining honey in the freezer; 100% honey does not have a high enough water content to freeze...and while in the freezer the honey won't crystalize.
  • Cream honey is wonderful on bagels and for sweetening your tea or other hot drinks.  The vanilla creamed honey is particularly nice in coffee.
  • There are more than 300 varieties of honey and depending on the floral source; each has a distinct color and flavor.
  • Use mild honey (like clover) in recipes where "delicate flavors predominate and strong flavored honey (buckwheat or wildflower) when distinct honey flavor is desired. 
  • Baking with honey
    • For best results, use recipes developed for honey.
    • When you substitute honey for sugar in recipes, use the following guidelines.
      • Substitute ½ to ¾ cup of honey for every cup of sugar.
      • Add tsp. baking soda for every cup of honey used.
      • Reduce amount of liquid by ¼ cup for each cup of honey used.
      • Reduce oven temperature by 25°F to prevent over browning of baked goods.
    • For easy removal, spray measuring cup with vegetable cooking spray before adding honey.
